Student-Run Coffee Shop Adds a Pump of Liveliness in AC


Saxbys is the place to go. What used to be a plain old wall has transformed into a vibrant community for those who need an extra shot of energy.


While it has been in operation for less than three weeks, there is no doubt that Saxbys has been a huge success within the Mount community. Popular among students from breakfast to lunchtime, where capacity can exceed more than fifty people at a time, Saxbys has left an impression on the whole student body.


Saxbys’ mission is to "Make Life Better," with an entrepreneurial foundation highlighting its mission. Saxbys takes its mission to heart by providing more than 40 beverages with newly added menu items. The items range from Mate energy drinks, several types of cold brews, a selection of classic hot coffees, espresso drinks, teas and steamers. They even have matcha drinks and smoothies, focusing on the diverse population of the school. In addition to the beverages offered, Saxbys took an approach to also offer food as part of their menu. Their vast food menu expands from all-day breakfast to grilled cheese and even a mini bakery, among other menu items.


Despite Saxbys having success since its grand opening, it also comes with its critics. Some students who wished to remain anonymous criticized the preparation model. A female student who asked to remain anonymous said, “Saxbys has failed to reach a portion of demographics which is of the most important to the Mount, women.” A group of sophomores also complained, stating, “A serious problem from Saxbys is the wait time to get our drinks.” Unlike critics who believe that the wait times are longer than most normal coffee shops, Alejandro Velasco (C'25) asserts, "The location is the best-selling point and the drinks come in fast, or at least every time I've ordered.”


As it relates to the location of the coffee shop, it seems that professors who have classes within walking distance of the cafe seem to have a positive opinion of Saxbys. Sister Asterone Gary spoke highly of Saxbys. She stated, “I don't have a problem with it.” Other professors spoke well of Saxbys also. Dr. Sean Lewis commented on the matter saying, "I love the beverage service and the food was great, I would definitely go back for it, but the only problem I have with it is the time delivery model. Other than that, I think it's great!"


The first SCEO (Student Cafe Executive Officer) of Saxbys at Mount St. Mary's University, Chloe Knill, manages the day-to-day operations at the student cafe. With a team of over 30 members and team leaders, Knill has much to do with the day-to-day operations. She always tends to remind herself of what got her to be there in the first place.


The idea of “Making Life Better” is not absent at all for Knill. She stated, "I was intrigued by the real-world experience and how I could benefit from the whole learning experience. I love communicating with everyone and so far, I've learned a lot and hope to keep going strong with my team who I all love.” Charlotte McCauslin, a student worker at Saxbys, expressed her love for the job saying, “I cannot ask for a better place to work because I don't feel like I'm working, I feel like I am giving back to my community, and I think that's what I love about Saxbys."


Currently, Saxbys hours are from Monday through Thursday 7 a.m. to 7 p.m. and from Friday 7 a.m. to 4 p.m. Currently, Saxbys is looking for team members. For more information, please go to saxbyscoffee.com
